Espaguetti Verde Cremoso

A creamy and delicious green spaghetti recipe, easy and quick to prepare. Perfect for a weeknight meal.

Ingredients

  • 250g spaghetti
  • 1 bunch spinach (approx. 100g)
  • 1 clove garlic
  • 50g cream cheese
  • 50ml milk
  • 30g grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook spaghetti according to package directions. Drain, reserving some pasta water.
  2. While spaghetti cooks, blanch spinach in boiling water for 30 seconds. Drain and immediately plunge into ice water to preserve color. Squeeze out excess water.
  3. In a blender, combine blanched spinach, garlic, cream cheese, milk, and Parmesan cheese. Blend until smooth.
  4. Heat olive oil in a pan over medium heat. Pour in the spinach sauce.
  5. Add the cooked spaghetti to the pan with the sauce. Toss to coat evenly.
  6. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
  7. Season with salt and pepper to taste.
  8. Serve immediately.

Notes

  • You can add a pinch of nutmeg for extra flavor.
  • For a richer sauce, use heavy cream instead of milk.
  • Add cooked chicken or shrimp for a complete meal.
